As promised, I’m sharing the recipe for my paleo chocolate coconut banana bread which I showed you in my Full day of eating paleo vlog.
It not only tastes delicious, it also contains a lot of good carbs and fats and some protein. It is perfect to refuel your body on a leg day. Of course, you can also enjoy it as a treat or even as a healthy breakfast cake.
My last week
This week has been very busy and I was at work all day long. Nevertheless, I managed to get a very good workout in every morning and I discovered that I quite like getting up very early, having a pre workout snack and my big breakfast after my session.
I’m also very proud that I finally made the step and started filming and doing youtube. I might not be perfect but I try to speak English as flawless as I can and I hope that over time I will get more confident when filming.
When watching my first vlog, I also realized how skinny I still am and that I definitely want to try to put on some more body fat and muscle. At the moment, I am eating according to what my body tells me and I’m not gaining weight (and at least also not loosing any!). I’ll probably start tracking calories and macros again and try to do a healthy paleo bulk over winter. I don’t want to do a traditional bulk where you focus on gaining a lot of muscle/weight over a shorter period of time without putting on too much body fat because I always have to keep in mind that my gut could go crazy any time. My first priority is still gut health and I don’t do fitness and nutrition to look a certain way. I just want to be healthy and happy and enjoy life.
Chocolate coconut banana bread
- 1 small banana/kleine Banane about 80-100g
- 10 g plantain flour/Bananenmehl
- 20 g coconut flour/Kokosmehl
- 10 g shredded coconut/Kokosraspeln
- 20 g almond flour/Mandelmehl
- 5 g unsweetened cacao powder/ungesüsstes Kakaopulver
- 1 egg/Ei
- 100 ml water or coconut milk/Wasser oder Kokosmilch
- Sweetener of choice/Süße nach Wahl I used raw stevia powder/ich habe reines Steviapulver verwendet
- apple cider vinegar/Apfelessig
- 5 g baking powder/Backpulver
- baking soda/Natron
- banana slices and shredded coconut to top/Bananenscheiben und Kokosraspeln als Topping
Preheat the oven at 200' C top- and bottom-heat./Den Ofen auf 200 Grad Ober-/Unterhitze vorheizen.
Smash banana with a folk in a bowl. Add dry ingredients, egg yolk and water or coconut milk with a splash of apple cider vinegar./Die Banane mit einer Gabel in einer Schüssel zermatschten. Die trockene Zutaten, Eigelb und Wasser oder Kokosmilch und einen Schuss Apfelessig hinzugeben.
Whisk the egg white until stiff and fold into the dough./Das Eiklar steif schlagen und unter den Teig heben.
Fill the dough into a little loaf pan (dough is for half a big pan) or muffin tins and top with some banana and shredded coconut./Den Teig in eine Minikastenform (Hälfte einer großen Form) füllen oder Muffinförmchen verwenden und Bananenscheiben und ein paar Kokosraspeln darauf geben.
Bake for about 30 minutes./Für etwa 30 Minuten backen.
