Berry chocolate cheesecake slices – paleo & vegan

Summer always calls for cheesecake! Especially during berry season, I love nothing more than a berry cheesecake with lemon peel and some more fresh berries aside. Yesss, I am still addicted to my sweet potato brownies  but on really hot summer days I prefer such a light cake over a rich chocolate cake.

And the best thing is that this recipe is macro friendly and doesn’t contain any dairy which makes it perfect for almost any dietary needs… paleo, vegan, high protein, lower fat and still so delicious!

Depending on what berries you have available you can adjust the recipe to what is in season. By far my favorite are black currants. I have always been loving any kind of currants but black currants have been my faves since being little. I  used to drink black currant juice non stop as a child.

Ingredients

Chocolate base

  • 10 g plantain flour/Kochbananenmehl or any other starchy flour/oder ein anderes stärkehaltiges Mehl
  • 5 g coconut flour/Kokosmehl
  • 10 g raw cacao/Rohkakao
  • 10 g almond flour/Mandelmehl
  • 20 ml water/Wasser
  • 40 g pumpkin sauce/Kürbispüree or apple sauce/oder Apfelmark
  • sweetener of choice/Süße nach Wahl I used pure stevia powder/ich habe reines Steviapulver verwendet

Cheesecake layer

  • 100 g almond yoghurt/Mandeljoghurt or cashew or coconut yoghurt/oder Cashew-/Kokosjoghurt
  • 5 g coconut flour/Kokosmehl
  • 15 g almond flour/Mandelmehl
  • vanilla, lemon peel/Vanille, Zitronenabrieb
  • sweetener of choice/Süße nach Wahl I used pure stevia powder/ich habe reines Steviapulver verwendet
  • 30 ml water/Wasser

Instructions

  1. Preheat the oven at 180' C top- and bottom-heat./Den Ofen auf 180 Grad Ober-/Unterhitze vorheizen.

  2. Mix all ingredients for the chocolate base and fill the dough into small tins. Then mix all ingredients for the cheesecake layer and fill it on top./Alle Zutaten für den Schokoboden vermengen und in kleine Förmchen füllen. Dann die Zutaten für die Käsekuchenschicht vermengen und darauf geben.

  3. Top your cake slices with berries (or any other fruit) of choice./Die Kuchenstückchen mit Beeren (oder anderem Obst) nach Wahl belegen.

  4. Bake in the pre-heated oven for 40 minutes until golden./Im vorgeheizten Ofen für etwa 40 Minuten backen bis die Küchlein leicht goldig gebräunt sind.
