Pumpkin cinnamon white chocolate cups – paleo & vegan

It’s fall – it is pumpkin season. Reason enough to film a pumpkin edition snack video! In this video I’m sharing two of my favourite sweet pumpkin recipes. But before I loose myself in writing, I’ll end this blog post here and hope you enjoy watching the video!

Pumpkin cinnamon cups

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4 cups muffin size
Calories 122 kcal

Ingredients

White chocolate layer

  • 40 g cacao butter melted/Kakaobutter geschmolzen
  • vanilla/Vanille, cinnamon/Zimt
  • sweetener of choice/Süße nach Wahl I used raw stevia powder/Ich habe rohes Steviapulver verwendet.

Pumpkin layer

  • 50 g pumpkin sauce/Kürbispüree
  • 2 tablespoons/EL maple syrup/Ahornsirup
  • 5 g coconut flour/Kokosmehl
  • cinnamon/Zimt

Instructions

  1. Mix all ingredients for the white chocolate cinnamon layer, fill it into small muffin tins/cups and put in the freezer for about 15 minutes./Alle Zutaten für die weiße Zimtschoko vermengen, in Förmchen füllen und für 15 Minuten in den Gefrierschrank geben.

  2. Mix all ingredients for the pumpkin layer and fill into cups as second layer above the chocolate. If you want to, you can add any toppings you like. Put into the freezer for about 15 minutes again./Alle Zutaten für die Kürbisschicht vermengen und auf die Schokoschicht geben. Nach Lust und Laune Toppings daraufgeben. Dann nochmals für etwa 15 Minuten in den Gefrierschrank geben.
